Orangana Hempseed Muffin

As spring workouts intensify, I've been going for the carbs! These muffins make a good 300 calorie snack or breakfast with lots of fruit, fiber, a little protein and healthy fat. You can add cinnamon or other spice to it. This is a good base recipe and you can vary the flavor by trying different fruits or vegetables. Basically you want about 1 1/2 cups of fruit.






Orangana Hempseed Muffin
Dry: 1 c whole wheat flour
1/2 soy flour
1/2 c bran
1 tsp baking soda
1 tsp baking powder

Wet: (mash or processor)
1 whole orange with zest
1 banana
1/2 c egg whites (or 1/2 cup flaxseed meal)
1/2 c organic sugar OR 1 cup of applesauce or your favorite substitute
3 T coconut oil
5 T hempseeds



Mix first set of ingredients separately from second set. Mix together to make a batter. If too thick, add more orange juice. Pour into muffin tins and bake at 350°F for 20-30 minutes or until a knife inserted into muffin comes out dry. Makes 6 muffins.
